Winemaking practices

While the Sierra Foothills are known for hotter climate grapes, such as Zinfandel and Tempranillo, The Coyote Ridge Peninsula offers the distinct opportunity to grow world class Cabernet Franc, Cabernet Sauvignon and Syrah.

Knowing this treasure, we at Raven Oaks have chosen to create wines that truly express the character of the hillside sub-appellation. In an effort to create more lush, fruit forward wine, our winemaking practices include using a Bordeaux yeast, with a harvest at about 26 brix. We cold soak then ferment in stainless steel for about 12-14 days. A pump over is performed to promote maximum fruit extraction.

Raven Oaks uses approximately 80% French Oak Barrels, combining a selection from the finest French Cooperages. Both the Syrah and the Cabernet Franc age with no less than 22 months to bring you a balanced and structured wine with complexities that attest to the unique microclimates and terrior of the Coyote Ridge Peninsula.
